Garlic Crunchy Chicken

Another simple meal tonight, recipe courtesy of Mr Jamie Oliver.  Much like I halve any given amount of lemon zest, I also tend to double any quantity of garlic- it’s a glorious flavour and I include a rather large photograph of a garlic bulb to commemorate my love. nom.

Without further ado, You will need:

chicken ( I used mini fillets- 400g)

garlic-as much as you like, maybe 4 or 5 cloves..

crackers (around 8)


zest of half a lemon


1 egg


This is another recipe that called for a whole lemon (for half the quantity of chicken I ended up using)- madness!

I also used a higher cracker to butter ratio than asked for (1 tbsp butter, a little cube) and had no problem getting the crumbs to stick.

To make the crumbs throw your crackers, garlic, lemon zest, parsley, butter and seasoning into a food processor until they look something like this:

You will then need to form your flour, egg and crumb assembly line and dip your chicken fillets into each in that order..

Then wack them onto a baking tray and into the oven on a high setting for about 15 minutes.

Enjoy the garlicky smells…

I served with mini paprika potato wedges  to make use of a hot oven-essentially I have ended up with chicken and chips! Classy and delicious.. I promise that vegetables also featured in this meal, they just weren’t photogenic..

You can also fry instead of baking and it’s really easy to mix up the flavours in your crumbs; rosemary, thyme, lemon zest, seedy or wholegrain crackers..maybe even a bit of Parmesan. Anything goes in the world of upmarket KFC..
